Instructions
  1. Chop the onion, garlic and ginger.
  2. Heat the ghee on medium heat and add the mustard seeds.
  3. When they begin to pop, add the cumin seeds and cook for 30 seconds.
  4. Turn the heat down to medium-low, then add the onions, garlic and ginger. Sauté until the onions begin to become translucent.
  5. While the onions are cooking, wash the dal and rice 3-4 times in a bowl until the water is clear.
  6. When the onions are ready, add the rest of the spices and stir.
  7. Cook for 30 seconds, then add the dal, rice and sweet potato. Stir for a minute or two.
  8. Add the water (it can be boiled separately), bring to a boil, then cover the pot and turn heat down low.
  9. Cook for 30 minutes, stirring occasionally. Top with additional water if it starts to dry out.
  10. Add the chopped vegetables and cook for 4-5 minutes more.
  11. Top with chopped coriander and serve.
  12. Enjoy!
